Red Velvet Sugar Cookie Bars

Rich, soft Red Velvet Sugar Cookie bars topped with sweetened cream cheese frosting will be a hit at any party.

Ingredients

Red Velvet Cookie Bars:

  • 1 cup Butter softened
  • 1 1/2 cup Sugar
  • 2 Eggs
  • 2 teaspoons Vanilla
  • 1 1/2 Tablespoons Red Food Coloring
  • 1/3 cup Cocoa Powder
  • 2 cups Flour
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Cream Cheese Frosting:

  • 1/2 cup Butter softened
  • 1 - 8 ounce pkg. Cream Cheese softened
  • 3 cups Powdered Sugar
  • 1 teaspoon Vanilla optional
  • 1/8 teaspoon Salt if using unsalted butter

Instructions

  1. Preheat oven to 350 degrees.
  2. In large bowl, cream together butter and sugar for 4 minutes.
  3. Add eggs, vanilla, and red food coloring and mix until combined.
  4. Add cocoa, flour, baking soda, and salt and stir together.
  5. Lightly spray a 9 x 13 pan with non-stick cooking spray and spread batter evenly in pan.
  6. Bake for 18 - 22 minutes, or until toothpick or cake tester comes out clean. Cool.
  7. Frosting:
  8. In large bowl, cream together butter and cream cheese until light and fluffy. Add powdered sugar and stir until combined. Add optional vanilla and salt. Chill for 5 minutes.
  9. Spread onto cooled red velvet cookie bars. Garnish with sparkling sugar, white sprinkles, or M & M's. Cut into squares
