Ghirardelli Squares Chocolate Cookies

Rich double chocolate cookies topped with popular Ghirardelli chocolate squares.

  • 1 cup Butter, cold cut into small cubes
  • 1 3/4 cup Sugar
  • 2 Eggs
  • 2 teaspoon Vanilla
  • 1/2 cup Cocoa high quality **
  • 2 1/4 cup Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Chocolate Chunks
  • 16-24 Ghirardelli Chocolate Squares flavor of choice


  1. Preheat oven to 360 degrees.
  2. In large mixing bowl, cream cold butter cubes and sugar for at least 4 minutes, scraping the bowl halfway through mixing.
  3. Add eggs one at a time, mixing well after each addition. Add in vanilla.
  4. Stir in flour, cocoa, baking powder, and salt. Stir in chocolate.
  5. Drop large spoonfuls onto cookie sheet lined with a silpat or parchment paper.
  6. Cook for 10-14 minutes.
  7. Remove from oven and let rest for 4-5 minutes.
  8. Meanwhile, unwrap Ghirardelli squares wrappers. Place on top of cookie and gently press down lightly on the cookie.
