Ingredients

  • 4 Chicken Breasts
  • 4 Tablespoons Butter
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 3 Garlic Cloves finely diced
  • 1 cup Chicken Broth
  • 3/4 cup Heavy Cream
  • 2/3 cup Sun-Dried Tomatoes in oil, roughly chopped
  • 1 1/4 cup Shredded Fresh Parmesan Cheese divided
  • Fresh Basil

Instructions

  1. Heat large skillet over medium-high heat. Add butter and let sizzle. Add chicken and cook until no longer pink and fully cooked through. The cooking time will depend on the thickness of the chicken breast. Sprinkle with salt and pepper.
  2. Remove chicken from skillet and cover. Reduce heat to medium and add garlic to skillet and saute for 30 seconds. Pour in chicken broth, heavy cream (or half n half), sundried tomatoes, and 3/4 cup of parmesan cheese. Use jarred sun-dried tomatoes in oil. This keeps them soft, chewy, and moist. Let sauce simmer until it thickens -- about 5-6 minutes.
  3. Add chicken back into the sauce and simmer for 1-2 minutes. Sprinkle with remaining 1/2 cup parmesan cheese and fresh basil ribbons. Serve warm with angel hair pasta, sauteed vegetables, or creamy mashed potatoes.
