Ingredients
1Oniondiced
1TablespoonOilmay use less
1Jalapenofinely diced (optional)
1lb.Ground Turkey
2teaspoonsChili Powder
2teaspoonsCumin Powder
1teaspoonSalt
1teaspoonPepper
(2)4 ouncecans Green Chilies
(2)15 ozcans White Cannellini or Great Northern Beansin seasoning
(2)14.5 oz.cans Chicken Broth29 ounces total
2cupsMonterey Jack or Pepper Jack Cheeseshredded
Optional Toppings:
Avocadodiced
Cilantro
Jalapeno
Sour Cream
Corn Chips
Instructions
Heat large skillet or pot over medium-high heat. Add oil, onion, and jalapeno, if you are using. Saute for 4-5 minutes until onion starts to become tender. Add ground turkey and cook for 7-8 minutes or until turkey starts to become golden brown.
Add chili powder, cumin, salt, and pepper. Stir to coat turkey.
Reduce heat to medium-low.
Stir in green chilies, beans, and chicken broth.
Simmer for 10-15 minutes or until onions are soft.
Stir in 1 1/2 cups of cheese, reserving 1/2 cup for garnish.
Check for seasoning.
Ladle into soup bowls and top with remaining cheese, avocado, cilantro, and sour cream.
