Ingredients
6-10cupsBaby Spring Mix or Romaine Heartschopped
2White Peaches or Nectarinessliced
6ouncesRaspberries
1cupFeta Cheese or White Cheddar Cheese
3/4cupSliced Almonds
3TablespoonsSugar
Sweet Dressing:
3/4cupOlive Oil
2TablespoonsRed Wine Vinegar
3-4TablespoonsSugar
1/2teaspoonSalt
Instructions
Place greens on large platter or in bowl. Top with fresh peaches, raspberries, and cheese.
In small saucepan, heat almonds and sugar over low heat, stirring often. As the sugar starts to melt, stir to coat almonds and to keep from burning. Once sugar is melted and almonds are nicely coated, remove from heat and place candied almonds on wax or parchment paper. Let cool.
Sprinkle candied almonds over salad.
To make sweet dressing: In small bowl or shaker bottle, mix oil, vinegar, sugar, and salt. Place in refrigerator until ready to serve.
