Ingredients
4cupsArugulaRomaine, or Spring Mix
2-3Peaches or Nectarinesthinly sliced
5ouncesGouda CheeseI used sliced gouda cheese, cut into strips, and rolled up into pinwheel
1/2cupWhole Raw Almonds
2TablespoonsHoney
PinchSalt
Honey Dressing:
1/2cupOlive Oil
1/3cupOrange Vinegaror Apple Cider Vinegar
3TablespoonsHoney
1/2teaspoonMustard
1/2teaspoonSalt
Instructions
Heat small skillet over medium low heat. Add almonds and saute for 1 minute. Add honey and salt and stir to coat. Cook for 1-2 minutes longer, stirring often.
Remove from pan and pour onto waxed paper to let cool. Set aside.
Place greens in large salad bowl or platter. Top with fresh sliced peaches. Add cheese and honey almonds.
In small bowl, mix vinegar, honey, mustard and salt. Drizzle in olive oil and whisk until combined.
