Chocolate Almond Brioche Baked French Toast

Chocolate for breakfast is completely acceptable with this baked french toast that's covered in a rich, custard batter with melted chocolate, crunchy almonds, and fresh vanilla bean whipped cream.

  • 1 Brioche Loaf sliced
  • 3 Egg Yolks
  • 1 cup Whole Milk
  • 1/4 cup Brown Sugar
  • 3/4 cup Chocolate Chunks semi, milk, or dark
  • 1/2 cup Slivered Almonds

Vanilla Bean Whipped Cream:

  • 3/4 cup Heavy Whipping Cream
  • 1/4 cup Powdered Sugar
  • 1 Vanilla Bean or 2 teaspoons Vanilla Bean Paste or Pure Vanilla Extract


  1. Preheat oven to 350 degrees.
  2. In blender or large bowl, mix together egg yolks, milk and brown sugar.
  3. Place brioche is buttered or lightly sprayed 8 X 8 baking pan. The bread can be angled so that it's slightly standing up. Pour custard, making sure to coat each piece.
  4. Sprinkle with chocolate and slivered almonds.
  5. Bake for 20-24 minutes or until it is light golden brown and the custard is soaked up by the bread.
  6. In mixing bowl, whip heavy cream until soft peaks form. Add powdered sugar and vanilla bean and mix. Sweeten to taste.
  7. Top chocolate french toast with fresh whipped cream and sprinkle with powdered sugar (optional).
