1/2cupBrown Sugar
2largeEggs
1teaspoonVanilla
1/2cupFlour
1/4cupCake Flour
1/2cupCocoa Powder
1/4teaspoonSalt
1/2cupChocolate Chips
1 1/2cupsPeppermint Bark(divided)
1/4teaspoonPeppermint Extract(optional)
Instructions
Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla. If using peppermint extract, add it now.
Stir in flour, cake flour, cocoa, and salt until mixed together.
Fold in chocolate chips and 3/4 cup of peppermint bark, reserving the rest for sprinkling on the top.
Pour into an 8 x 8 pan and spread evenly. Sprinkle remaining 3/4 cup of peppermint bark over the top of brownies. Bake for 26-36 minutes.
