Ingredients
4cupsCabbage(purple and green, thinly sliced)
1mediumCucumber(sliced)
1cupCarrots(shredded or matchstick carrots)
1/2cupSliced or Slivered Almonds
3-4cupsShredded Chicken
Thai Peanut Dressing:
1/4cupCreamy Peanut Butter
2TablespoonsRice Vinegar (or white vinegar)
2TablespoonsLime Juice
1/4cupOil
2TablespoonsHoney
3TablespoonsSugar
1TablespoonSoy Sauce
1inchFresh Ginger
2Garlic Cloves
1/4cupCilantro Leaves
1/4teaspoonRed Pepper Flakes
1teaspoonSalt
Instructions
In a large bowl, toss together thinly sliced cabbage, cucumber, carrots, and almonds.
To make dressing, add peanut butter, vinegar, lime juice, oil, honey, sugar, soy sauce, fresh ginger, garlic, cilantro, red pepper flakes, and salt into a blender. Blend until pureed.
When ready to serve, toss salad with the peanut butter dressing. Top with fresh cilantro if so desired.
