1lb.Cheese Tortellini (fresh from refrigerated section, cooked according to package instructions)
1cupCherry or Grape Tomatoes (halved)
1largeCucumber(peeled and sliced)
1/4cupRed Onion(thinly sliced and diced)
1cupFeta Cheese(crumbled or cut into squares)
Greek Olive Mix(optional)
2TablespoonsFresh Basil Leaves(torn into small pieces)
Pepperoncinis(optional)
Greek Dressing:
2/3cupExtra-Virgin Olive Oil
1/3cupRed Wine Vinegar
2Garlic Cloves(finely minced)
1 1/2teaspoonsDried Oregano
1 1/2teaspoonsSalt
1/2teaspoonPepper
1teaspoonSugar
1/2teaspoonRed Pepper Flakes(optional)
1TablespoonFresh Lemon Juice(optional)
Instructions
Cook tortellini according to package instructions. Drain and set aside. Place in large bowl.
While pasta is cooking, make greek dressing. In a blender or shaker bottle, blend oil, vinegar, garlic, oregano, salt, pepper, and sugar. Add more seasonings if needed. Toss dressing all over the pasta.
Add tomatoes, cucumber, red onion, feta cheese, and fresh basil leaves. Toss to coat. Taste and add more salt if needed.
