Ingredients
3Tomatillos
1Jalapeno or Serrano Pepper(deseeded)
3TablespoonsWhite Onion(chopped)
1/2bunchCilantro Leaves(cut off stems)
1Garlic Clove
1 to 2TablespoonsFresh Lime Juice
1teaspoonSalt
1largeAvocado
Instructions
Prep the tomatillos. Peel off the husks and then wash the sticky coating off of the tomatillos. Cut in half if blending raw or you can roast the tomatillos on the broil setting in the oven, if you desire a roasted flavor. Place in a blender or food processor.
Cut the jalapeno or serrano pepper in half. For a milder salsa, remove the seeds. Add in the onion and garlic.
Cut the stems off the cilantro and add the cilantro leaves to the blender. Squeeze in fresh lime juice. Add in salt. Blend until desired chunkiness.
Add in the avocado and blend until creamy. Taste for seasonings and add more salt or lime juice, if needed.
Notes
Can it be made ahead of time?Yes, but because of the avocado, it is best eaten within 24 hours. Add extra fresh lime juice and press plastic wrap directly over the surface of the avocado salsa to prevent browning.
