2Peaches(sliced)
4SlicesSourdough Bread (or Challah, Multigrain, or thick white)
2-4TablespoonsRicotta Cheese (optional)
1Tablespoon Honey
4SlicesWhite Cheddar Cheese (may add more depending how cheesy you like it)
2Tablespoons Butter
Optional:
4SlicesCrispy Bacon
Fresh Basil
Balsamic Glaze
Instructions
Peel and slice peaches and set aside.
Spread ricotta cheese over bread. Top one side with peaches and drizzle with honey and the other side with cheddar cheese.
Spread butter on top of each slice of bread. Place on a panini press or heat skillet over medium-low heat. Once it is heated, add sandwiches. Cook until cheese is melted. If bread is browning to quickly, reduce heat to low.
If adding any optional ingredients, remove the top of sandwich and place on top of melted cheese. Serve immediately as it is best served warm.
