Italian Cowboy Caviar has all the flavors of a Caprese salad — juicy tomatoes, creamy mozzarella pearls, fragrant fresh basil — mixed with tender white beans, zippy pepperoncinis, and a flavorful Italian dressing.

Ingredients
14 to 16ouncesGrape Tomatoes(cut in half lengthwise)
8 to 12ouncesFresh Mozzarella Balls
2TablespoonsRed Onion(finely diced)
1/4cupFresh Basil
(1)14-ounce canCannellini White Beans(drained and rinsed)
1/4cupPepperoncinis(sliced)
1packetGood Seasons Dry Italian Dressing Mix
3TablespoonsOlive Oil(plus more for drizzling)
2TablespoonsFresh Lemon Juice
1/2teaspoonSalt
1/4cupPine Nuts(optional)
Crostini, Pita Chips, Crackers(for serving)
Instructions
Chop the tomatoes, basil, and red onion. If using grape tomatoes, cut in half lengthwise. I like to cut the basil leaves into ribbons.
In a large bowl, add tomatoes, mozzarella pearls or balls (cut in half), red onion, and basil. Sprinkle with salt. Drain and rinse the white beans. Add pepperoncinis, pine nuts, and optional olives.
In a small bowl, whisk together lemon juice, olive oil, and Italian dressing seasoning mix. Pour the dressing over the ingredients and gently mix until everything is coated.
Enjoy immediately or refrigerate for 1–2 hours to deepen the flavors. Sprinkle with Tuscan seasoning and cracked black pepper, if so desired. Drizzle with extra virgin olive oil.
Serve with crostinis, pita chips, or sturdy crackers.

This Italian Cowboy Caviar was inspired by Giada de Laurentis. I added white beans instead of green olives, used grape tomatoes instead of marinated tomatoes, used Italian seasoning dressing mix instead of tuscan herb blend and more.
