1/2Onion(finely diced)
4Garlic Cloves(finely minced)
1cupChicken Broth
1 1/2cupsHeavy Cream
1/2 to 2/3cup (4 oz)Sundried Tomatoes (in oil)
1/2teaspoonSalt
1/2teaspoonPepper
1/4 to 1/2teaspoonRed Pepper Flakes
1lb.Gnocchi(shelf stable or refrigerated)
1cupFresh Baby Spinach
4ouncesParmesan Cheese
4 to 5Fresh Basil Leaves(cut into ribbons)
1 teaspoonItalian Seasoning(optional)
Instructions
Heat a large skillet over medium heat. Add butter and onion and let cook for 6-7 minutes, stirring often. Add garlic and cook for 1 minute longer.
Add the chicken broth, heavy cream, sundried tomatoes, salt, pepper, red pepper flakes, and optional Italian seasonings. Stir together.
Add in gnocchi and let simmer in sauce for 5 minutes.
Stir in baby spinach (I suggest tearing into small pieces or chopping) and parmesan cheese. Stir in fresh basil (reserving some for the garnish).
When ready to serve, generously top with fresh basil ribbons and sprinkle on extra parmesan cheese. Serve immediately.

What kind of gnocchi should I use? Use shelf-stable potato gnocchi (often found in the pasta aisle) or fresh gnocchi from the refrigerated section. Avoid frozen gnocchi, as it may release too much moisture.Why don’t I need to cook the gnocchi before adding it to the sauce? Gnocchi are delicate and cook quickly. When added to the simmering sauce, they cook through while absorbing flavor. Can I use something other than cream? Yes! Substitute with half-and-half for a lighter sauce. It may be slightly thinner than heavy cream but it will reduce as it heats up.
