Ingredients
1cupButter(cold, cut into small cubes)
1cup + 2 TablespoonsBrown Sugar
2/3cupSugar
2largeEggs
1teaspoonVanilla Extract
2 1/4cupsAll-Purpose Flour
1 1/2cupsRolled Oats(old fashioned)
1teaspoonBaking Soda
1/2teaspoonCornstarch
1/2teaspoonSalt
2cupsSweetened Dried Cranberries(such as Craisins)
2cupsWhite Chocolate Chips
Instructions
Preheat oven to 365 degrees. In a large mixing bowl, cream butter, brown sugar, and sugar for 3-4 minutes or until light and fluffy. Scrape the sides of the bowl halfway through.
Add eggs and vanilla extract and cream for 1 minute longer.
Stir in flour, rolled oats, cornstarch, baking soda, and salt. Fold in dried cranberries and white chocolate chips.
Drop onto a parchment paper lined, light-colored baking sheet. Bake for 9-11 minutes or until edges starts to turn a light golden color. Don't overbake.
Let cool for 5 minutes before removing from the baking sheet to allow time for the cookies to set up.
Notes
To make the cookies look more gourmet, add 1 3/4 cups of white chocolate chips and dried cranberries to the cookie dough, leaving out 1/4 cup of each to add after the cookies come out of the oven. Once the cookies come out of the oven, carefully press the white chocolate chips and dried cranberries on top of the cookies.
