3TablespoonsRed Curry Paste
3TablespoonsSoy Sauce
2TablespoonsSesame Oil(or oil, of choice)
(1)14-ounce canCoconut Milk
2teaspoonsFresh Ginger *(minced, see notes)
2Garlic Cloves *(minced)
1TablespoonRice Vinegar
2TablespoonsHoney(or real maple syrup)

Instructions
Preheat your oven to 375°F. Grease a medium baking dish or ovenproof skillet.
In a bowl, whisk together the coconut milk, red curry paste, honey, soy sauce, sesame oil, rice vinegar, ginger, and garlic. Taste and adjust — add more soy sauce for saltiness, rice vinegar for brightness, or curry paste for spice.
Place frozen dumplings in a single layer in the baking dish. Pour the sauce evenly over the top, making sure the dumplings are mostly covered.
Cover with foil and bake for 20 minutes. Uncover and bake an additional 5-10 minutes, until the sauce is bubbling and dumplings are tender.
If using baby spinach, immediately top with fresh spinach so it wilts slightly in the heat. Garnish generously with cilantro, sliced green onions, sesame seeds, and chili crisp.
Notes
I used the frozen dumplings from Trader Joe's. You can find frozen dumplings at any local grocery store.If using dried ginger, use 1 teaspoon.Use fresh minced garlic or the frozen garlic cubes (from Trader Joe's)
