Instructions
Make the custard. In a shallow bowl or dish, whisk together the half-and-half (or heavy cream), eggs, vanilla extract, sugar, and cinnamon until fully combined and smooth. A tip would be to blend it with an immersion blender or blender to ensure the cinnamon gets fully mixed into the custard.
Soak the bread. Dip each slice of challah or brioche bread into the custard mixture, letting it soak for about 20 seconds on each side so it absorbs the custard without falling apart.
Cook the French toast. Heat a griddle or skillet over medium-low heat and grease with butter. Cook each slice for 3-5 minutes per side, until golden brown and cooked through in the center. If the exterior is browning too fast, reduce the heat to low.
Make the whipped cream. While the French toast cooks, whip the heavy cream, powdered sugar, and vanilla bean paste together until soft-to-stiff peaks form.
Prep the peaches. Slice fresh peaches into thin wedges. For extra flavor, you can lightly toss them with a touch of sugar and let them sit for a few minutes to release their juices.
Assemble and serve. Stack the warm French toast slices on a plate, top with a generous dollop of whipped cream, fresh sliced peaches, and a drizzle of real maple syrup. Serve immediately.
Notes
I suggest using ripe peaches for the sweetest flavor. If the peaches aren't ripe enough, you can toss the fresh sliced peaches in 2 Tablespoons of sugar.
