1cupUnsalted Butter(softened)
1 1/2cupsGranulated Sugar
1largeEgg
1largeEgg Yolk
2teaspoonsVanilla Extract
2 2/3cupsFlour
1teaspoonBaking Powder
1/2teaspoonBaking Soda
3/4teaspoonSalt
Peppermint Cream Cheese Frosting:
1/2cupButter(softened)
(1)8-ounce pkg.Cream Cheese(softened)
3cupsPowdered Sugar
1/4 to 1/2teaspoonPeppermint Extract
Crushed Candy Canes or Peppermint Bark Crunch
Instructions
In a large mixing bowl, cream together butter and sugar for 4 minutes or until light and fluffy. Scrape the sides of the bowl. Add egg and egg yolk and vanilla and mix for 1 minute longer.
Fold in flour, baking powder, baking soda, and salt. Don't overmix or it creates too much gluten, which leads to tough cookies.
Chill the dough. Wrap tightly and refrigerate for at least 1 hour.
Preheat oven to 350 degrees. After the dough has chilled, remove it from the refrigerator. Line baking sheets with parchment paper. Roll into balls and place on a light-colored baking sheet.
Bake for 9-12 minutes or until lightly golden on the edges but still soft in the center. Let cool.
In a large mixing bowl, cream together softened butter and cream cheese for 3 minutes until light and fluffy. Scrape the sides of the bowl and add powdered sugar and peppermint extract.
Spread frosting on each cooled sugar cookie. Sprinkle with crushed candy canes or peppermint bark chips.
Notes
If I am wrapping these cookies in a cookie box to give to someone, I like to freeze the cookies for at least 15 minutes before placing them in the box to allow the frosting to firm up.
