This Slow Cooker Boursin Chicken is rich, creamy, and packed with flavor thanks to garlic herb Boursin cheese, ranch seasoning, and pepperoncinis. You will love this Mississippi Chicken!
Lightly grease the slow cooker crockpot with nonstick spray or a drizzle of olive oil.
Place chicken breasts in the bottom of the slow cooker. Sprinkle the ranch seasoning evenly over the top, along with black pepper and salt.
Add sliced pepperoncini peppers on top of the chicken. Drizzle in 1–2 tablespoons of their briny juice for extra zest.
Place the whole Boursin cheese wheel on top of the chicken. Add butter (if using) in small pats around the cheese.
Cook for 4 1/2 to 5 hours on low or 3 hours on high. I suggest cooking on LOW for the most tender chicken.
Remove chicken to a plate and shred with two forks. Whisk or stir the melted Boursin and butter into a smooth, creamy sauce. Return the chicken to the slow cooker and stir to coat.
Let everything warm together for 10–15 minutes before serving. Garnish with extra pepperoncini slices or chopped parsley.
