Set your oven to 350°F, and grease or line a 9x13-inch baking pan with parchment paper.
In a large mixing bowl, cream the butter and sugar together for 4–5 minutes, until light and fluffy. This step matters — properly creaming the butter and sugar is what gives the bars their soft texture
Scrape down the sides of the bowl, then add the eggs and vanilla. Cream for another 1–2 minutes until fully incorporated.
Stir in the flour, cream of tartar, baking soda, and salt, mixing just until combined. Avoid overmixing, which can make the bars tough instead of tender.
Make the cinnamon-sugar topping. In a small bowl, stir together the sugar and cinnamon.
Press the dough evenly into the prepared 9x13 pan. Sprinkle the cinnamon-sugar mixture evenly over the top.
Bake for 24–30 minutes, or until the edges are lightly golden and the center is set but still soft. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter.
Let the bars cool completely in the pan before slicing into squares. This helps them hold their shape and makes for cleaner cuts.
Notes
Cream of tartar is what gives snickerdoodles their signature slight tang, setting them apart from a plain sugar cookie or bar. If you prefer a milder flavor, cutting it back to 1 teaspoon softens that tang without losing the classic snickerdoodle taste.No cream of tartar on hand? Swap it (and the baking soda) for 2 teaspoons of baking powder — no other changes needed. Just keep in mind the flavor won't be quite the same, since cream of tartar is what gives snickerdoodles that signature tang.
