Equipment
12 inch cast iron skillet
mixing bowl set
Ingredients
4TablespoonsButter
2 1/2cupsOnion(chopped, I prefer a sweet onion)
3/4teaspoonOnion Powder
1/4 to 1/2teaspoonCayenne Pepper
1teaspoonSalt
1/2teaspoonPepper
4ounces Cream Cheese(softened to room temperature or placed in the microwave at 50% power for 10-15 seconds)
1/2cupSour Cream(preferably full-fat)
1/4cupMayonnaise
Instructions
In a large skillet, heat butter over medium heat. Add onions and cook for 5 minutes, stirring often. Reduce heat to medium-low and continue to cook for 15-20 minutes. Watch carefully as you may need to turn the heat to the low setting. Stir often. The onions will begin to turn a golden brown color and become soft. Add onion powder, cayenne pepper, salt, and pepper and stir together. Remove from heat and let cool.
In a bowl, combine softened cream cheese, sour cream, and mayonnaise. Fold in caramelized onions. Check for seasoning. The onion dip will become more flavorful as it chills in the refrigerator.
Serve with crinkle potato chips, French bread, veggies, or crostini.
