In large pot, heat olive oil over medium high heat. Add onion, carrots, and celery and cook until tender, stirring occasionally. Sprinkle with salt and pepper. Let cook for at least 15 minutes to soften and for the flavors to develop. Add garlic and cook for 2 more minutes.
Once brown bits start to form in the bottom of pan, add tomato paste and stir. Add beef broth and cook for 4-5 minutes.
Add sausage, using a spoon to break it up, cook until the meat is brown, about 10-15 minutes.
Add water and stir to combine well. Season with salt and pepper.
Bring the sauce to a boil and reduce to low heat and let it simmer.
Let simmer for at least 15-20 minutes. If you have time, let it simmer for hours. As the sauce reduces, add more water as needed.
Make pasta according to package instructions and salt the water to infuse flavor in pasta.
Top sauce with fresh basil leaves and garnish with parmesan cheese.
