Ingredients
2TablespoonsOil
1 1/2lbs.Chicken Breast(sliced)
1teaspoonSalt
1teaspoonPepper
1cupRed, Yellow, and Orange Peppers(sliced)
1cupChicken Broth
1TablespoonFresh Ginger(minced)
2TablespoonsChili Garlic Sauce
1TablespoonHoisin Sauce
1-2TablespoonsPeanut Butter
6-8ouncesRice Noodles
2Green Onions(thinly sliced)
Cilantro Leaves(optional)
Chopped peanuts(optional)
Instructions
Heat the oil in large skillet over medium high heat.
Add chicken breast and saute for 4-5 minutes. Sprinkle with salt and pepper. Add peppers. Saute for 6-8 more minutes until chicken is cooked thorough.
In small bowl, combine chicken broth, ginger, chili garlic sauce, hoisin sauce, and peanut butter. Whisk together.
Reduce heat to low and add sauce.
Cook rice noodles according to package instructions.
Toss noodles with chicken and sauce. Season to taste.
Top with green onions, cilantro and peanuts (optional).
Notes
*If you want more peanut butter flavor, add 1 more Tablespoon of peanut butter* If you want some coconut flavor, add 1/4 - 1/2 cup of canned coconut milk.
