I will share the simple steps of making delicious almond croissants with minimal effort! This is the easiest almond croissant recipe ever! I can’t stop making them…my kids keep requesting them.
This summer, I was blessed to visit Barcelona, Spain with some of my fellow food blogger friends. We stayed in a beautiful, historic, charming apartment close to cafes and bakeries. We could walk to this popular bakery that was known for its buttery, flaky croissants so every morning I ordered an almond croissant. It was heavenly!
When I arrived back home, I wanted to try to recreate it without all of the work. Making homemade croissants is time-consuming and I wanted a shortcut that still tasted delicious! These easy almond croissants have gone viral on TikTok and you may have seen some TikTok almond croissant recipes…and this is my take on them.
What are Almond Croissants?
These almond croissants are buttery, flaky are brushed with an almond simple syrup filled with a creamy almond filling and topped with crunchy sliced almonds. Almond croissants are made by taking traditional croissants and enhancing them with an almond-flavored filling. The filling typically consists of almond flour, butter, sugar, and sometimes egg, creating a sweet and nutty mixture that is spread generously inside the croissant. After baking, they are often adorned with sliced almonds on top, adding a delicious crunch.

So, I am going to share my tips on making the easiest homemade almond croissants ever. Okay when I say homemade…we are taking a shortcut by using already baked croissants. That still counts, right?
I love to buy the big pack of Costco croissants to make chicken salad sandwiches with but sometimes we can’t finish them before they go stale. Fear not! We are going to revive those stale croissants and turn them into the best almond croissants.
I make these all of the time for my family and they taste just as good as that bakery in Barcelona, Spain which is a huge statement!
Why use Day-Old Croissants?
You may wonder why we would use day-old croissants instead of fresh ones? The secret lies in their texture. Day-old croissants are slightly stale, which makes them more absorbent and less prone to becoming soggy when filled with the almond mixture.
Ingredients:
These almond croissants are so simple and easy to make. You start off with bakery croissants so it is definitely a shortcut!
- Croissants — use your favorite butter bakery croissants. Day old croissants are best but you can make these with fresh croissants too. You can always toast fresh croissants.
- Butter — use good quality butter if at all possible for the almond filling.
- Sugar — this recipe calls for granulated sugar.
- Almond Flour — fine blanched almond flour can be found in the baking aisle at any grocery store.
- Egg
- Almond Extract — I like to use Nielsen-Massey almond extract.
- Vanilla Extract
- Powdered Sugar — to dust on the top of the almond croissants.
- Sliced Almonds — to sprinkle on the top before baking.
Almond Simple Syrup:
This is what you brush on the croissants to impart more almond flavor into the croissants.
- Sugar
- Water
- Almond Extract
How to make Almond Filled Croissants:
- Preheat Your Oven to 350 degrees. Make a simple syrup by placing the water and sugar in a microwave-safe bowl. Heat in the microwave for 90 seconds or until the sugar is completely dissolved. Stir in almond extract.
- Prepare the Almond Filling: In a bowl, combine almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract. Mix until well combined and smooth.
- Slice the Croissants: Cut each croissant in half horizontally. This will create a pocket for the almond filling. Lightly brush the inside of the croissant with simple syrup.
- Fill the Croissants: Generously spread the almond filling on the bottom half of each croissant. Reserve a small amount of almond filling for the top of the croissants. Place the top half back on, creating a sandwich.
- Top with Sliced Almonds: Spread a small amount of almond filling on the middle top of each croissant. Sprinkle sliced almonds over the top of each croissant, pressing them gently into the almond filling.
- Bake to Perfection: Place the filled croissants on a baking sheet and bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
- Dust with Powdered Sugar: Allow the almond croissants to cool slightly before dusting with powdered sugar for an extra touch of sweetness.

Can I prepare these a day in advance and them bake them?
Delicious!!! I honestly cannot bake for anything. I try and try and failure all the time. I saw this recipe and said OK I think I can! You will not be disappointed with just how good these are. I used the large croissants, and they were too big. I have now passed this recipe. Use the smaller croissants. Winner of a recipe.

Oh my goodness, these sound like heaven to me. I have to try these out. I’m going to Costco today anyway so I will be sure to grab some Croissants while I’m there. I will use French Butter on mine as I have a lot of it. Could you use almond paste on these maybe? I won’t even try….I’ll make them your way first.
