  • Greek Yogurt: Use your favorite type of non-flavored greek yogurt. If you are looking for a higher protein pancake, use greek yogurt with higher protein content.
  • Buttermilk or Milk: This helps to make the pancakes extra tender but you can also use 2% or whole milk instead. If you want less tang, use milk instead. For extra protein, you can use Fairlife milk.
  • Eggs: This adds an extra protein boost and binds the pancakes together.
  • Vanilla Extract
  • Sugar: May use granulated sugar or coconut sugar.
  • Flour: Use all-purpose or whole wheat flour.
  • Baking Powder: This helps the pancakes to rise so make sure that it is fresh.
  • Salt

  • Heat skillet over medium heat. Place a pat of butter onto skillet (or use non-stick cooking spray) and let it begin to melt. Pour pancake in 1/3 to 1/2 cup portions and cook until golden brown on each side.

These light, fluffy, and tangy Greek yogurt pancakes are higher in protein and lower in fat and melt-in-your-mouth.

Ingredients  

  • 2 cups Greek Yogurt
  • 1 1/2 cups Buttermilk or Milk
  • 4 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1/3 cup Sugar
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt

Instructions 

  • Mix wet ingredients together. In a large bowl, mix greek yogurt, buttermilk or milk, egg, and vanilla until combined.
