If your social feed looks anything like mine lately, you’ve seen these broth bowls everywhere. One of my sons in college texted me and said, “Mom, why don’t you have beef broth bowls on Modern Honey yet?” I quickly replied with a photo and said, “they are coming soon!” They couldn’t wait for me to create my own version of the Crispy Beef Broth Bowls. Crispy beef, a mound of jasmine rice, and a creamy broth poured around everything instead of over it. I’ll admit I scrolled past them a few times before I finally caved and made them, and now I get the hype.

My version leans into a red curry coconut broth. The trick that makes it taste like it came from your favorite Thai spot is blooming the curry paste in the thick coconut cream first. Then the beef gets pressed flat in the skillet and left alone until it’s deeply browned and crispy, and it’s tossed in a sticky honey-ginger glaze. Every bite gets a little crunch, a little sweet heat, and that rich broth.

Best part? It’s on the table in 30 minutes, it’s packed with protein, and everyone can top their own bowl. It has become one of our favorite weeknight dinners.

Ingredients:

CRISPY BEEF:

  • Ground Beef – I recommend cooking it undisturbed first to create deep browning and crispy texture.
  • Sesame Oil – Adds rich, nutty flavor and helps the beef develop a deep sear.
  • Garlic and Ginger – Build aromatic depth that’s essential to the dish’s Asian-inspired flavor profile.
  • Soy Sauce and Honey – Combine to create a salty-sweet glaze that coats the crispy beef.
  • Rice Vinegar – Adds a touch of acidity to balance the sweetness of the honey.
  • Red Pepper Flakes and Black Pepper – Bring a subtle kick of heat to the beef glaze. Adjust red pepper flakes to your heat preference.

CURRY BROTH:

  • Red Curry Paste – Adds to the broth’s flavor!
  • Coconut Milk – Creates a rich, creamy broth base that balances the heat of the curry paste.
  • Beef Broth – Adds savory depth and ties the broth flavor to the beef.
  • Chili Garlic Sauce – Adds extra heat and tang to round out the broth. Add less if you want less spice.
  • Soy Sauce – Deepens the savory, salty flavor of the broth.
  • Salt – Enhances all the flavors.
  • Lime Juice – Brightens the rich broth with fresh acidity, added at the end to preserve its flavor.

TOPPINGS:

  • Jasmine Rice – A classic base that soaks up the flavorful broth.
  • Cucumber, Green Onions, and Fresh Herbs – Bring crunch, freshness, and bright flavor that balances the rich broth and beef.
  • Toasted Sesame Seeds – Add a finishing touch of nutty flavor and texture.
  • Chili Garlic Sauce and Lime Wedges – Let everyone customize the heat and acidity to their taste at the table.
  • Baby Bok Choy (Optional) – Adds a fresh, slightly charred vegetable element to the bowl.
How to make beef broth bowls

How to make the Viral Beef Broth Bowls:

  1. Bloom the curry paste. Spoon about 3 tablespoons of the thick coconut cream from the top of the can into a saucepan over medium heat. Cook 1 to 2 minutes, until it bubbles and starts to separate. Add the red curry paste and fry 1 to 2 minutes, stirring, until it darkens, smells fragrant, and you see oil separating at the edges.
  2. Build the broth. Whisk in the rest of the coconut milk until smooth, then add the beef broth, chili garlic sauce, soy sauce, and salt. Bring to a gentle simmer and cook 10 to 15 minutes, until slightly reduced and thickened. Turn off the heat, stir in the lime juice, and taste for salt.
  3. Crisp the beef. While the broth simmers, heat the sesame oil in a large skillet over medium-high. Add the ground beef and press it into a flat, even layer. Let it cook undisturbed 4 to 5 minutes, until the bottom is deeply browned. Break it up and cook another 4 to 5 minutes, until crispy and caramelized. Spoon off any excess fat.
  4. Glaze the beef. Stir in the garlic and ginger and cook 30 seconds. Add the soy sauce, honey, rice vinegar, red pepper flakes, and black pepper. Cook 2 to 3 minutes, stirring, until the sauce reduces into a sticky glaze that coats the beef.
  5. Sear the bok choy (optional). Wipe out the skillet, add a little oil, and sear the halved bok choy cut-side down for 2 minutes. Add a splash of water, cover, and steam 2 minutes more.
  6. Assemble. Place a scoop of rice on one side of a wide, shallow bowl and pile the crispy beef on top. Ladle the broth around the rice rather than over it, so the rice stays distinct and the broth pools around everything.
  7. Top and serve. Top with cucumber, green onions, cilantro or Thai basil, and sesame seeds. Serve with chili garlic sauce and lime wedges on the side.

Tips for the Best Beef Broth Bowl

Let the beef brown undisturbed. Pressing the ground beef into an even layer and letting it sit before breaking it up is what creates that deep, crispy caramelization.

Spoon or blot the fat off the beef. Removing excess fat after crisping the beef keeps the glaze from becoming greasy.

Use a wide, shallow bowl for serving. Keeping the rice and broth separate when plating (rather than mixing everything together).

Adjust the spice level to taste. Add more or less chili garlic sauce and red pepper flakes depending on how much heat you prefer.

Frequently Asked Questions:

Can I use a different protein instead of ground beef?

Yes, ground chicken, ground turkey, or ground pork would all work well in place of ground beef in this recipe.

Is this recipe very spicy?

The spice level is moderate and adjustable. You can reduce the red curry paste, chili garlic sauce, and red pepper flakes for a milder dish, or add more for extra heat.

Can I substitute a different curry paste?

Yes, though red curry paste gives this dish its signature flavor. Green curry paste can be substituted for a different, slightly more herbal flavor profile.

Storage Tips

Store the beef, broth, and rice separately in airtight containers in the refrigerator for up to 3-4 days. This helps keep the rice from becoming soggy in the broth. Reheat the broth on the stovetop over low heat and warm the beef and rice separately before assembling fresh bowls.

You can customize the spice level by using more or less chili garlic sauce. I like to buy the Huy Fong chili garlic sauce. You can find it in most grocery stores in the Asian food aisle.
