High Protein Cottage Cheese Pancakes

High-protein gluten-free cottage cheese pancakes make a healthy, filling, delicious breakfast! We are back in school, and since my kids are leaving at different times throughout the morning, I try to make quick, easy, and healthy breakfasts. I love to make these protein cottage cheese pancakes on Sunday to store in the refrigerator during the week. They become a quick grab-and-go breakfast for my family. My kids love these cottage cheese pancakes!

If you’ve been skeptical about cottage cheese pancakes, this is the recipe that will change your mind. Blended completely smooth, the cottage cheese disappears entirely into the batter — no curds, no lumps, no cottage cheese flavor you’d ever notice. What you’re left with is a fluffy, golden pancake that happens to pack in serious protein, with no protein powder required.

This recipe comes together entirely in the blender, uses rolled oats instead of flour (which makes it naturally gluten-free), and includes two versions depending on what you’re looking for: a classic version with a touch of melted butter and maple syrup mixed right into the batter, and a lighter version that skips the added sugar and fat, letting you control the sweetness with your toppings instead. Both use the exact same base of cottage cheese, eggs, and oats, so you’re getting the same protein boost either way — the difference comes down to how indulgent you want the batter itself to be.

Whether you’re meal prepping breakfasts for the week, feeding a hungry family, or just looking for a high-protein way to start the day that doesn’t rely on a protein shake, these pancakes deliver.

Why Cottage Cheese Pancakes work:

Cottage cheese is one of the most protein-dense foods you can cook with, and blending it into pancake batter is a genuinely clever way to boost protein without changing the flavor. Once it’s blended smooth with the eggs, the cottage cheese loses its curd texture entirely and simply adds creaminess and structure to the batter — you’d never guess it was in there. Combined with eggs and hearty rolled oats instead of white flour, these pancakes end up significantly higher in protein than a traditional pancake, while also being naturally gluten-free.

These Cottage Cheese Pancakes are whipped up in the blender with simple ingredients. I start with Shamrock Farms Cottage Cheese because it is low in calories, carbohydrates and fat, and high in bone-building calcium. Shamrock Farms cottage cheese is hand-crafted and made with pure, fresh Shamrock Farms milk. I care about the ingredients that go into the food I feed my kids. It is packed with 13 grams of protein and 110 mg of calcium per serving to help my kids with their focus, energy, and keeping them fuller longer.  It’s a delicious staple in my kitchen!

Protein and Macros of Cottage Cheese Pancakes:

Based on this recipe making about 16 small pancakes (roughly 4 servings of 4 pancakes each), here’s how the two versions compare:

These Cottage Cheese Pancakes have 28 grams of protein per serving. They are made with either low-fat cottage cheese, eggs, vanilla extract, rolled oats, baking soda, and salt or cottage cheese, eggs, rolled oats (gluten-free), melted butter (optional), 100% real maple syrup (optional), vanilla, baking powder, and salt. I love to whip them up in a blender in less than 1 minute. These are such a quick and easy breakfast!

One of the most popular recipes on Modern Honey are my BANANA OATMEAL PANCAKES. I wanted to create another high-protein, gluten-free pancake recipe that tastes incredible!

The Protein Cottage Cheese Pancakes are basically a hybrid of a crepe and a fluffy pancake.

Ingredients for Classic Cottage Cheese Pancakes:

  • Low-fat cottage cheese
  • Eggs
  • Melted butter
  • 100% real maple syrup or sugar
  • Vanilla Extract
  • Rolled oats (gluten-free, if needed)
  • Baking powder
  • Salt
  • Butter, for the griddle or skillet

Ingredients for the Healthier High Protein Cottage Cheese Pancakes:

  • Low-fat cottage cheese (such as Good Culture)
  • Eggs
  • Vanilla extract
  • Rolled oats
  • Baking powder
  • Salt
  • Butter and 100% real maple syrup, for topping

The healthier version skips the melted butter and sweetener in the batter entirely, relying on the natural creaminess of the cottage cheese and eggs to hold everything together. All the sweetness and richness gets added at the table instead, which gives you more control over exactly how indulgent your plate ends up being.

How to Make Cottage Cheese Pancakes:

  1. Blend the batter. Add the cottage cheese, eggs, melted butter (if using), maple syrup or sugar (if using), vanilla, rolled oats, baking powder, and salt to a blender. Blend until completely smooth and pureed.
  2. Heat the skillet. Heat a skillet over medium-low heat. Once hot, add a pat of butter to coat the surface.
  3. Cook the pancakes. Pour the batter onto the skillet in your desired pancake size. Watch carefully — cottage cheese pancake batter can go from perfectly golden to overdone quickly. Flip as soon as the underside turns a light golden brown and bubbles begin to appear on top.
  4. Finish cooking. Cook the second side until golden, then remove from the skillet.
  5. Serve. Serve warm with butter, real maple syrup, and fresh fruit.

Tips for the Best Cottage Cheese Pancakes:

  • Blend until completely smooth. This is the key to not tasting or feeling the cottage cheese curds at all — don’t stop blending early.
  • Cook over medium-low heat, not medium-high. Because this batter is denser and more protein-rich than traditional pancake batter, it needs a gentler heat to cook through without burning on the outside.
  • Watch closely and flip promptly. These pancakes can brown faster than you’d expect, so stay near the skillet rather than stepping away.
  • Keep pancakes small to medium in size. Smaller pancakes are easier to flip cleanly and cook through more evenly than large ones, given how thick this batter is.
  • Let the batter rest for a few minutes before cooking, if time allows. This gives the oats a chance to soften slightly, which can improve the final texture.

How to Store and Reheat Cottage Cheese Pancakes:

Store leftover pancakes in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave, toaster, or in a skillet over low heat until warmed through.

Can You Freeze Cottage Cheese Pancakes?

Yes, these pancakes freeze extremely well, which makes them a great meal-prep breakfast. Let the pancakes cool completely, then freeze in a single layer on a baking sheet until solid before transferring to a freezer bag or container. They’ll keep for up to 2 months. Reheat straight from frozen in the toaster or microwave.

Frequently Asked Questions:

Can you actually taste the cottage cheese in these pancakes? No — once fully blended, the cottage cheese loses its curd texture completely and blends seamlessly into the batter. Most people can’t detect any cottage cheese flavor at all.

Are cottage cheese pancakes gluten-free? Yes, as long as you use certified gluten-free rolled oats, since oats can sometimes be cross-contaminated with gluten during processing.

Do I need a high-powered blender to make these? A standard blender works well for this recipe. Just make sure to blend long enough that the oats break down and the batter is completely smooth, with no visible cottage cheese curds remaining.

Can I make the batter ahead of time? Yes, the batter can be made up to a day in advance and stored covered in the refrigerator. It may thicken slightly as it sits, so you can thin it with a splash of milk if needed before cooking.

What’s the difference between the two versions of this recipe? The classic version includes melted butter and maple syrup mixed directly into the batter, giving it a richer, sweeter flavor on its own. The healthier version leaves those out of the batter, relying on the cottage cheese and eggs alone, with butter and maple syrup added as toppings instead. Both versions have a similar protein count per serving.

Can I use full-fat cottage cheese instead of low-fat? Yes, full-fat cottage cheese will work in this recipe, though it will increase the fat and calorie count slightly per serving while keeping the protein count similar.

Why is my batter too thick to pour? Cottage cheese pancake batter is naturally thicker than traditional pancake batter because of the oats and cottage cheese. If it feels too thick to work with, you can thin it slightly with a splash of milk.

This is our absolute favourite healthy pancake recipe and it’s become a staple on the weekends! We love that they taste just like regular pancakes with all the benefits of being high protein and gluten free. I’m also very appreciative of the quantity this recipe produces. Most gluten free recipes I’ve found require doubling or tripling for our family of 4, this one produces a stack of pancakes with plenty for leftovers. Thank you very much for posting this recipe!

I am literally obsessed with every one of your recipes! Every single one of them are sooooo good!! Thanks for helping me pound a stack of pancakes on my own!

  4. Haven’t made yet, but would love to. Can someone tell me how many pancakes per serving?????????????? I don’t see that answered yet.

  5. I will definitely try these as I look for more gluten-free recipes. Are the nutrition facts posted using Shamrock’s Low Fat (2%) Cottage Cheese or Shamrock’s Farm Fresh (4%) Cottage Cheese as it seems to appear in the photos?
