What kind of tomatoes should I use?
Grape tomatoes are my go-to here — they’re naturally sweeter and less watery than regular tomatoes. Cherry tomatoes work as a substitute if that’s what you have on hand. I’d avoid large slicing tomatoes for this one, since they release too much liquid and can make the topping soggy by the time it hits the chicken.
What kind of mozzarella works best?
Mini mozzarella pearls are the easiest option since they’re already bite-sized and need zero prep. If you can’t find pearls, a ball of fresh mozzarella cut into small cubes works just as well. I’d steer clear of the low-moisture, shredded mozzarella you’d use on pizza — it doesn’t have the same softness that makes a caprese salad taste like a caprese salad.
Panko vs. regular breadcrumbs
Panko is what gives this chicken its crispy texture. The larger, airier flakes crisp up in oil in a way that fine breadcrumbs just can’t replicate. If panko is all you have on hand, regular breadcrumbs will still work, but expect a slightly less crunchy result.

How to make crispy chicken:
A few things make the biggest difference here:
- Pound it thin and even. Uneven chicken cooks unevenly — thinner spots dry out while thicker spots stay undercooked. Get the whole breast to a consistent thickness before breading.
- Don’t skip the flour step. Flour first helps the egg cling to the chicken, which then gives the panko something to stick to. Skipping straight to egg-and-panko usually means a patchy crust.
- Get your oil hot before the chicken goes in. If the oil isn’t hot enough, the breading absorbs oil instead of frying quickly, leading to a greasy, soft crust instead of a crispy one. A thermometer helps here — you’re aiming for around 350°F (180°C).
- Rest it on a wire rack, not a plate. Setting the chicken on a plate traps steam underneath and softens the bottom crust almost instantly. A wire rack lets air circulate so the crust stays crisp while it rests.
How to Make Crispy Caprese Chicken:
- Marinate the tomatoes. Toss the quartered grape tomatoes with a little extra virgin olive oil, salt, and pepper. Set aside while you prep the chicken — this gives them a few minutes to release their juices and soak up flavor.
- Butterfly and pound the chicken. Starting with 2 chicken breasts, place one flat on a cutting board and carefully slice it horizontally, cutting almost all the way through but stopping just before the other side. Open it up like a book so you have one larger, thinner piece. Repeat with the second breast — you’ll end up with 4 pieces total from the original 2.
- Pound the chicken. Place a chicken breast between two sheets of plastic wrap and use a rolling pin or meat mallet to pound it to an even thickness. Repeat with the second breast.
- Mix the seasoning. Combine the Italian seasoning, salt, onion powder, garlic powder, and black pepper in a small bowl.
- Set up your breading station. Line up three shallow dishes: flour mixed with half the seasoning blend, beaten eggs in the second, and panko mixed with the remaining seasoning in the third.
- Bread the chicken. Coat each piece fully in flour, then egg, then panko, pressing gently so the crumbs stick.
- Fry until golden. Heat a generous layer of olive oil in a large pan over medium heat until it reaches around 350°F. Fry the chicken for about 3–4 minutes per side, until golden brown and cooked through to an internal temperature of 165°F. Transfer to a wire rack and sprinkle with a pinch of flaky salt.
- Finish the salad. Toss the basil and mozzarella pearls into the marinated tomatoes until everything is evenly coated.
- Assemble and serve. Spoon the caprese salad generously over each piece of chicken and finish with a drizzle of balsamic glaze.
Top Tips:
- Season each layer — the flour, egg, and panko all get a portion of the seasoning blend, so every bite of crust has flavor, not just the surface.
- Don’t overcrowd the pan. Fry one piece of chicken at a time if your pan is small, so the oil temperature doesn’t drop.
- Let the tomatoes marinate while you prep everything else — even 10–15 minutes makes a difference in flavor.
- Add the balsamic glaze right before serving, not while the salad is resting, so it doesn’t get absorbed and lose its glossy drizzle.
