Without that aeration, melted butter cookies bake up denser and chewier instead of fluffy or cakey. - Freeze the dough in a log: Roll the chilled dough into a log, wrap tightly in plastic wrap, and freeze for up to 3 months. Slice off rounds and bake straight from frozen, adding a minute or two to the bake time.
