I love celebrating the 4th of July gathered together with friends and family.

One of my kids’ favorite desserts is a homemade fruit pizza with a sugar cookie crust. So I decided to make it festive for the perfect patriotic 4th of July dessert. Everyone LOVES this easy fruit pizza recipe! This is the BEST summer dessert recipe.

Ingredients:

This patriotic fruit pizza is made with a soft and chewy sugar cookie crust with a creamy vanilla filling and topped with fresh fruits in a flag pattern and piped with homemade whipped cream.

SUGAR COOKIE CRUST:

Butter — I suggest using softened unsalted butter. If you use salted butter, reduce the salt by 1/4 teaspoon.

Sugar — use granulated sugar.

Egg + Egg Yolk — the egg and egg yolk creates a soft, chewy texture.

Vanilla — use pure vanilla extract for the best flavor.

Flour — I suggest using all-purpose flour.

Baking Powder and Salt — gives rise to the sugar cookie dough crust and the salt gives flavor.

VANILLA CREAM CHEESE FILLING:

This light and fluffy cream cheese frosting is made with only 4 simple ingredients.

Cream Cheese — use softened, full-fat cream cheese.

Powdered Sugar — this helps to sweeten the filling and helps to thicken it as well.

Heavy Cream — make sure this heavy cream is super cold which will help the peaks to form.

Vanilla Extract — I suggest using a high-quality pure vanilla extract.

FRESH WHIPPED CREAM:

This homemade whipped cream is made with only heavy cream and powdered sugar.

Heavy Cream — use COLD heavy whipping cream and use a cold bowl which will help when whipping.

Powdered Sugar — add more or less powdered sugar depending on preference.

FRUITS:

You only need two fresh fruits to make the perfect flag pattern.

Raspberries — fresh raspberries are used to make the stripes in the flag.

Blueberries — fresh blueberries are used for the stars and for the perimeter of the fruit pizza.

How to make Flag Fruit Dessert:

  1. Start by making the sugar cookie dough crust. This is such an easy cookie dough recipe. Cream the butter and sugar for 4 minutes until light and fluffy. Stir in egg, egg yolk, and vanilla. Fold in flour, baking soda, and salt. Press into a round pizza pan. Bake for 15-20 minutes. Set aside to cool.
  2. Make the vanilla cream cheese filling. Whip the cream cheese for 2-3 minutes until fluffy, scraping the sides of the bowl to ensure even whipping. Add the powdered sugar, heavy cream, and vanilla and whip for 2 minutes longer or until the heavy cream is thickened. A tip would be to make sure the heavy cream is cold.
  3. Make the whipped cream. Whip cold heavy cream in a cold mixing bowl until soft peaks form. Fold in powdered sugar and whip until stiff. Put in a piping bag or decorating tool to pipe onto the fruit pizza.
  4. Spread the cream cheese filling over the cooled cookie crust. Put the blueberries all around the perimeter of the cookie. Place the blueberries in the upper left corner to make the stars. To make the stripes, place raspberries in rows. Pipe whipped cream in between the raspberries.
  5. Cover and chill until ready to serve. Slice into wedges.

Sugar Cookie Flag Fruit Pizza

Ingredients  

SUGAR COOKIE CRUST:

  • 3/4 cup Butter (1 1/2 sticks, softened)
  • 1 1/2 cups Sugar
  • 1 large Egg
  • 1 large Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1 3/4 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt

CREAM CHEESE FROSTING:

  • 12 ounces Cream Cheese (softened)
  • 2 cups Powdered Sugar
  • 1/2 cup Heavy Cream
  • 1 teaspoon Vanilla Extract

WHIPPED CREAM:

  • 1 1/2 cups Heavy Cream
  • 1/3 cup Powdered Sugar

FRESH FRUIT:

  • 6 to 9 ounces Blueberries
  • 12 ounces Raspberries

Instructions 

  • Preheat oven to 350 degrees. In a mixing bowl, cream together butter and sugar until light and fluffy for 3-4 minutes. Add 1 egg and egg yolk and vanilla.
  • Fold in flour, baking powder, and salt, and make sure to not overmix as this creates too much gluten in the cookie dough. 
  • Line a round 12-inch or 14-inch pizza pan with parchment paper or spray with non-stick cooking spray. Using your fingers, press the sugar cookie dough into the pan, pressing up the sides of the pan. Bake 15-18 minutes until soft and chewy. Don't overbake. Let cool.

CREAM CHEESE FILLING:

  • In a mixing bowl, mix the softened cream cheese until light and fluffy, about 2 minutes. This whips air into the cream cheese and also makes sure that it is extra creamy. Add powdered sugar, heavy cream, and vanilla. The heavy cream needs to be cold in order for it to whip up. Mix for about 3 minutes, or until it is thickened and light and fluffy. 

WHIPPED CREAM:

  • Place the heavy cream and powdered sugar in a cold bowl and whip for 3-4 minutes or until stiff peaks form.

ASSEMBLING:

  • Spread the cream cheese frosting over the cooled sugar cookie crust. Put the blueberries all around the perimeter of the cookie. Place the blueberries in the upper left corner to make the stars. To make the stripes, place raspberries in rows. Pipe whipped cream in between the raspberries.
  • Cover and chill until ready to serve. Slice into wedges.

Notes

Storage: Cover and store in the refrigerator until ready to eat. Chill any leftovers in the refrigerator.

    This turned out SO CUTE. I got so many compliments on it, I think it’ll be a 4th of July tradition from now on! The cream cheese frosting was to die for, I’ll definitely be making more of it.

    Made this for July 4th. Yum! It was a hit. I did have to add more flour as my cookie dough was sticky (I prefer to use weights/grams if possible). Skipped the whipped cream because I ran out of time and decided it was good without. It was! The cream cheese filling was great. I used homemade vanilla paste in both the cookie and the filling.
