If you mixed guacamole and tomatillo salsa, salsa verde, together, you’d probably come up with Guacamole Salsa aka Avocado Salsa. It is creamy, bright, tangy, spicy, and the perfect salsa to drizzle on tacos, burritos, grilled meats, on top of nachos, or to dip tortilla chips in.

My daughter’s favorite food is steak, specifically carne asada tacos, so I make a big batch of carne asada steak for her and this creamy avocado tomatillo salsa and she eats it all week long for lunch. The avocado imparts just the right amount of creaminess while still letting the bright flavors from the tomatillos, cilantro, jalapeno, onion, and lime still shine through.

Guacamole Salsa Ingredients:

I love how easy it is to make this salsa because you throw everything into a blender or food processor and just blend it. It doesn’t get easier than that!

  • Tomatillos: These small green tomatoes are famous in Mexico. Choose firm tomatillos in a husk. Remove the husk and wash well to remove the sticky residue.
  • Avocado: Choose a ripe avocado that yields to gentle pressure. It should feel slightly soft but not mushy. For a creamier avocado salsa, add more avocado.
  • Jalapeno or Serrano Pepper: A serrano pepper is generally thinner and smaller than the jalapeno pepper but packs more heat. If you want a milder avocado tomatillo salsa, remove the seeds and inner membrane from the pepper.
  • Cilantro: You don’t need to remove all of the stems but hold a bunch of cilantro and slice off as many stems as possible.
  • White Onion: I suggest starting with less white onion and you can always add more. Some onions can be more pungent than others so it is better to add a little at a time.
  • Garlic: Add in a clove of garlic for extra flavor. You may also use garlic powder instead.
  • Fresh Lime Juice: This acidity balances out the avocado. Tomatillos are very acidic so you don’t need a lot of lime juice. If you want a creamier salsa, add more avocado.
  • Salt: This is the difference maker so make sure that your salsa de aguacate has enough salt.

What are tomatillos and how to choose them?

Tomatillos look like small green tomatoes in papery husks. Choose tomatillos that feel firm and aren’t shriveled or slimy. Peel off the husks and wash the sticky coating off the tomatillos with warm water.

Roasting Tip: For a deeper flavor, roast tomatillos in a skillet or under the broiler until blistered and slightly charred.

How to make Avocado Salsa:

  1. Prep the tomatillos. Peel off the husks and then wash the sticky coating off of the tomatillos. Cut in half if blending raw or you can roast the tomatillos on the broil setting in the oven, if you desire a roasted flavor. Place in a blender or food processor.
  2. Cut the jalapeno or serrano pepper in half. For a milder salsa, remove the seeds. Add in onion and garlic.
  3. Cut the stems off the cilantro and add the cilantro leaves to the blender. Squeeze in fresh lime juice. Add in salt.
  4. Blend until desired chunkiness. Add in avocado and blend until creamy. Taste for seasonings and add more salt or lime juice, if needed.
