These Crispy Buffalo Chicken Tacos with Jalapeno Ranch Dressing are made with spicy buffalo chicken, melted cheese, drizzled with a homemade cilantro jalapeno ranch. My kids love anything buffalo…especially wings so I am always trying to find ways to bring those flavors into my dinner recipes. I have made Buffalo Chicken Quesadillas, non-breaded Buffalo Chicken Bites, creamy Buffalo Chicken Chili and Buffalo Chicken Sliders and they love them but I wanted to create a taco recipe that highlights both buffalo chicken and pair it with my super popular Cilantro Jalapeno Ranch.
The star of the show is the buffalo chicken, which is perfectly seasoned and cooked to perfection. The buffalo sauce, with its signature spicy kick and tangy undertones, envelops each piece of chicken. The heat from the buffalo sauce is balanced by the creaminess of the jalapeno ranch.
What truly sets these tacos apart is the jalapeño ranch dressing. This creamy concoction combines the cool, tangy essence of ranch dressing with the spicy, zesty kick of jalapeños. The dressing drizzles over the tacos, adding a rich, velvety layer that perfectly complements the spicy buffalo chicken. The slight heat from the jalapeños enhances the overall flavor.

Ingredients:
Choose your favorite type of tortillas and cheese to customize these buffalo chicken tacos.
- Boneless Skinless Chicken — I suggest using chicken breast or chicken thighs in this recipe.
- Frank’s Red Hot Sauce or Buffalo Wing Sauce — my favorite is Frank’s Red Hot Sauce for spicy buffalo flavor.
- Butter — Adding butter helps to cut the spiciness while adding some richness.
- Salt and Pepper — Add more to taste.
- Colby Jack Cheese — Use your favorite type of cheese from cheddar to colby jack to a Mexican cheese blend in these tacos.
- Tortillas — Use either flour or corn tortillas in these buffalo chicken tacos. I like to pair flour tortillas with the buffalo chicken. I use the small fajita sized flour tortillas.
- Green Onions — For extra freshness, sprinkle green onions on top of the buffalo chicken.
- Cilantro — Add a sprinkle of chopped cilantro in the tacos for fresh flavor.

What Toppings should I put on top of the tacos?
Get creative with your toppings! In addition to the Cilantro Jalapeno Ranch, try adding sliced avocado, jalapeños, pickled red onions, blue cheese, green onions, or a squeeze of lime juice for extra flavor and texture.
Can I use rotisserie chicken instead?
Shred the rotisserie chicken into bite-sized pieces. Heat the buffalo sauce and melted butter in a skillet over medium heat. Add the shredded chicken to the skillet and toss until fully coated and heated through.
How to make Buffalo Chicken Tacos:
- Start by cutting the chicken into small bite-size pieces. Place in a bowl and toss with salt and pepper.
- Heat a large skillet over medium-high heat. Add butter. Once the butter is heated, add the chicken. Cook for about 5 minutes, or until fully cooked through. Stir in buffalo hot sauce.
- Remove the cooked chicken from the skillet. If you want the tortillas to be slightly crispy, drizzle some oil in the pan. Place tortillas in the skillet and sprinkle cheese into the center of each tortilla.
- Top with buffalo chicken. Sprinkle with chopped cilantro. Optional: sprinkle with green onions. Heat until cheese is melted and fold over.
- Serve with homemade Cilantro Jalapeno Ranch Dressing.
- May top with avocado, pickled jalapenos, blue cheese, or sour cream.
Can I cook the chicken in a crock pot slow cooker?
Yes! Place the chicken breasts in the slow cooker and season with salt and pepper. Pour buffalo sauce over the chicken. Cook on low for 4 hours or on high for 2-3 hours, until the chicken is tender and can be easily shredded. Shred the chicken in the slow cooker and mix it with the sauce.
Storage:
Store leftover buffalo chicken tacos in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
