Don’t Overbake

This is the most important tip in the entire post. Chocolate chip cookies continue to cook on the hot baking sheet after you remove them from the oven — a process called carryover cooking. Pull them when the edges are set and golden but the center still looks underdone, glossy, and slightly puffed. They will firm up as they cool. Overbaked cookies are dry and hard; underbaked cookies are soft, gooey, and chewy in all the right ways.

Measure Your Flour Correctly

This is the single most common reason cookies go wrong. If you scoop your measuring cup directly into the flour bag, you compact the flour and end up with 20 to 30% more flour than the recipe intends — producing dry, crumbly, cakey cookies. Instead, spoon flour into the measuring cup and level off with a straight edge. Better yet, use a kitchen scale and weigh your flour in grams. One cup of all-purpose flour = 120 to 125 grams.

Chill Your Dough
