I love easy, throw in the crockpot and forget it type recipes. Zero fuss, zero work, but amazing flavor. I was inspired to create this recipe because of how much you all love my Mississippi Pot Roast recipe. It’s a reader favorite!
At first, I was going to take the same recipe and make it with chicken instead. Then, I started thinking about how the au jus packet would pair with the chicken and then I had an idea…swap out the au jus packet for creamy garlic and herb boursin cheese. It was an experiment and I was ready to try it!
Since I was using chicken breast, it didn’t need as long to cook as a beef roast, so it was done in no time at all. My daughter came home from school and devoured it. She even sent a video message to my other daughter in Boston that she needed to make it as soon as possible! Thankfully, it was a hit and will now be in the dinner rotation.

The best slow cooker Boursin chicken recipe is made with only 4 ingredients and is the easiest chicken recipe ever!
- Chicken – Boneless, skinless chicken breasts or thighs work best; they become tender and juicy after slow cooking.
- Ranch Seasoning – this is the dried ranch dressing powder you can find in the dressing or spice section at the grocery store. I use Hidden Valley Ranch ranch powder.
- Pepperoncinis– Bring a subtle tang that balance out the creamy sauce.
- Boursin Garlic & Herb Cheese – The star of the show! Melts into a luxurious, flavorful sauce that coats every bite. I buy my boursin cheese at Costco since it is on sale often and it such a better deal.
- Salt & Pepper
- Optional — Butter
How to make Crockpot Boursin Chicken:
Prepare the slow cooker.
Lightly grease with nonstick spray or a drizzle of olive oil.
Add the chicken.
Place chicken breasts in the bottom of the slow cooker. Sprinkle the ranch seasoning evenly over the top, along with black pepper (and salt if needed).
Layer the flavor.
Add sliced pepperoncini peppers on top of the chicken. Drizzle in 1–2 tablespoons of their briny juice for extra zest.
Add the creamy base.
Place the whole Boursin cheese wheel on top of the chicken. Add butter (if using) in small pats around the cheese.
Cook.
- LOW: 4 1/2 – 5 hours
- HIGH: 3 hours
The chicken should be tender and easy to shred.
Shred & mix.
Remove chicken to a plate and shred with two forks. Whisk or stir the melted Boursin and butter into a smooth, creamy sauce. Return the chicken to the slow cooker and stir to coat.
Finish & serve.
Let everything warm together for 10–15 minutes before serving. Garnish with extra pepperoncini slices or chopped parsley.
