Tips for Making Better Soup
Salt in layers, not all at once. Season the vegetables when they go in, season again after the broth, and taste one more time at the end. Soup reduces as it simmers, so a pot that’s perfectly seasoned at the start will be too salty an hour later.
Brown your aromatics properly. The five or six minutes you spend cooking onions, carrots, and celery in butter until they’re soft and a little golden is where most of the flavor comes from. Rushing this step is the single most common reason homemade soup tastes flat.
Finish with acid. A squeeze of lemon will just brighten the soup and if it tastes like it’s missing something and more salt doesn’t fix it, acid is almost always the answer.
Never boil a cream soup. Once dairy goes in, keep the heat at low. Boiling will cause the cream to separate and go grainy, and there’s no bringing it back.
Fresh herbs at the end, dried herbs at the beginning. Dried herbs need time to soften and release their flavor. Fresh ones lose theirs if they cook too long.
What to serve with soup:
Here are some of my favorite recipes to serve with homemade soup. These recipes are always a hit in our home!
How long does homemade soup last in the fridge? Three to four days in an airtight container. Cool it in shallow containers before refrigerating so it chills quickly.
Can I freeze soup? Most soups yes, for up to 3 months. Skip freezing anything with cream, milk, potatoes, pasta, or rice, since all of those change texture badly. See the freezing section above for workarounds.
What’s the difference between soup and stew? Mostly the ratio of liquid to solids. Soup is liquid-forward and eaten with a spoon from a bowl. Stew has less liquid, bigger chunks, and a thicker, gravy-like base, and it’s usually cooked longer.
How do I make soup creamy without heavy cream? Purée part of it, stir in a few tablespoons of cream cheese, add evaporated milk, use full-fat coconut milk, or blend in a cooked potato or a handful of soaked cashews.
My soup tastes bland. How do I fix it? Salt first, and more than you think. If it still tastes flat, add acid — fresh lemon juice. After that, try something savory — a parmesan rind, a splash of soy sauce, a spoonful of tomato paste, or a bouillon cube or Better Than Bouillon paste.
Can I make these in a slow cooker? Many of them, yes. Brown your meat and aromatics on the stove first, since the slow cooker won’t do it for you and you’ll miss most of the flavor. Add dairy, pasta, and fresh herbs in the last 20 minutes.
